Recreating the flavours of a pepper bonsai tree, this refreshing cocktail is created to open up the pallet using copperhead gin, pink pepper corns citrus flavours and apperativum drops.

A AGED FASHION

A twist on the classic Old Fashion, aged in an oak barrel for one week using the popular Japanese whisky Nikka from the Barrel, infused with ginseng, umeshu, angostura bitters and a hint of salt. Stirred & perfectly diluted with a hint of sugar & served with a jujube…

FUMIKO

This refreshing cocktail compliments the flavours of Santa Teresa Rum, using pineapple & elderflower. It is then topped with caramelised pineapple.

GEISHA

A light, balanced jasmine gin cocktail with complimentary flavours of plum sake & grapefruit. Finished with scented lavender essential oil.

JAPITO

A Mojito style cocktail, bringing out the flavours of Blackwell Dark Rum, by using fresh granadilla, vanilla and matcha green tea. Topped up with Champagne.

LITTLE RAPPONGI

A fresh and exotic long drink based on Belenkaya vodka infused with kaffir lime leaves. Shaken with elderflower and home-made baked nashi pear and topped up with ginger beer.

Our take on a classic Negroni using fresh mandarines, Campari and Portobello Road Gin infused with jasmine and finished with zesty kumquat jam.

RED DRAGON

A beautiful combination of strawberry & coconut, based on Nikka coffey grain whisky, infused with fresh strawberries and koko kanu rum. It is stirred sezerac style & served with a dragonfruit garnish.

SAKURITA

A smoky & spicy cocktail, using La Penca mezcal & chipotle chilli. Shaken with fresh kumquat juice & agave syrup.

THAI MULE

A sweet & spicy cocktail, based on Koko Kanu Rum. With flavours of coconut, a homemade galangal ginger beer reduction, kombucha and more ginger beer!

Refreshing & full-bodied on the palate, through ageing on the lees, this has a very pure nose of lime zest, chalk, and a grassy hint. Well balanced with good length.

A fascinating whisky made with Yoichi, Miyagikyo and malt whisky made in a Coffey stills. Ripe apples, cinnamon and the slightest hint of smoke.

NIKKA COFFEY GRAIN 45%

Made mainly from corn in a continuous Coffey still. Complex with a mellow and sweet taste.

NIKKA COFFEY MALT 45%

Previously only released as part of single caks. Bills decided to add the coffey mal to their core range in 2014. Distilled in a coffey still normally used for grain whisky production, the malt is delightfully fruity and spicy. This whisky conatains notes of cloves, cinnamon, lemon and dried fruit.
